Maitake

Personality: Maitake (Grifola frondosa), also known as “Hen of the Woods,” grows in feathery clusters and has an earthy aroma with a velvety texture.

Benefits: Supports immune system, helps regulate blood sugar, and is rich in beta-glucans and vitamin D. Considered an adaptogen for stress support.

Prepare: Cut off “scab” where mushroom was plucked. Rinse before consuming. Tear clusters into pieces and toss the inner core.

Serve: Try Maitake “Steaks” – roast whole clusters with olive oil and herbs at high heat for 8–10 minutes until crispy at the edges, then serve as a hearty main or side.
