King Blue Oyster

Personality: King Blue Oyster (Pleurotus ostreatus var. columbinus) mushrooms are visually striking with blue-gray caps and thick, meaty stems. Their flavor is mild, sweet, and slightly earthy.

Benefits: Rich in antioxidants, B vitamins, protein, and fiber. Supports immune and heart health. Ideal for plant-based diets. 

Prepare: Cut off “scab” where mushroom was plucked. Rinse before consuming. Slice thick stems and caps. 

Serve: Make “King Blue Scallops”- slice stems into rounds, sear in butter, and serve w/ lemon & herbs as a seafood alternative. Or you can sauté, grill, or roast for 7–10 minutes until browned and crisp.
